Ingredients

  • 250 g gluten-free all-purpose flour blend
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • 120 ml warm water
  • Additional oil for brushing

Directions

  1. In a large bowl, whisk together the gluten-free flour blend, salt, and baking powder.
  2. Add the olive oil and mix until the mixture resembles coarse crumbs.
  3. Gradually add the warm water while stirring the mixture until it forms a soft and pliable dough.
  4. Divide the dough into 6 equal portions and roll each one into a ball.
  5. On a lightly floured surface, roll out each dough ball into a thin round, about 1/4 inch (0.5 cm) thick.
  6. Heat a large non-stick pan over medium heat. Brush one side of the rolled-out dough with a little oil.
  7. Place the dough in the pan, oiled side down, and cook until lightly browned, about 1-2 minutes on each side. Repeat with the remaining dough.
  8. Serve the warm flatbreads as wraps or use them as a base for toppings like hummus, avocado, and vegetables.
