Lentil Soup
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 tsp cumin
- Salt and pepper, to taste
Directions
- Rinse lentils and add to a pot with onion, carrots, garlic, vegetable broth, and cumin. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender. Season with salt and pepper.
