Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 tsp cumin
  • Salt and pepper, to taste

Directions

  1. Rinse lentils and add to a pot with onion, carrots, garlic, vegetable broth, and cumin. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender. Season with salt and pepper.
