Ingredients

  • 1 can of chickpeas (400g)
  • 1 large tomato, diced
  • 1/4 red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper, to taste

Directions

  1. Drain and rinse chickpeas. Mix with tomato, onion, and parsley in a bowl. Drizzle with olive oil and lemon juice. Season with salt and pepper.
