Chickpea Salad
Ingredients
- 1 can of chickpeas (400g)
- 1 large tomato, diced
- 1/4 red onion, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper, to taste
Directions
- Drain and rinse chickpeas. Mix with tomato, onion, and parsley in a bowl. Drizzle with olive oil and lemon juice. Season with salt and pepper.
